Collana Verde extra virgin olive oil is made from a blend of Itrana, Leccina, Frantoiana and Cicinella Sessana olives picked by hand and cold-pressed on the same day. This ensures that our olive oil retains all the flavours from the olives with notes of artichokes, freshly cut grass and the sweetness of almonds.

Our method of harvesting and the olive pressing modern techniques ensure the oil is full of nutritional values and is very low in acidity. Acidity levels for the 2025 October harvest measure only 0.2%, well below the 0.8% threshold for extra virgin.

Since 1605, the Giusti family has been producing Italy’s oldest balsamic vinegar, following a family recipe that’s remained the same since the start. Based in the Modena countryside, Giusti still to this day age their balsamic vinegars in original casks, adding historic flavour characteristics to every bottle.

Giuseppe Giusti’s 3 gold medal balsamic vinegar is high in density, with a velvety structure and delicate, round acidity. Ideal on fish tartare, caramelised onions, salads, grilled vegetables, fruit salads and desserts.
